Garlic Soup Recipe

If you're feeling down from the cold weather or are truly under the weather, here is a quick and easy garlic soup recipe that will comfort you and support your health.

 

6-8 cloves garlic pressed

3 cups vegetable broth (or Rapunzel's Vegetable Bouillon and water)

1/2 teaspoon caraway seeds (ground or whole)

4 small white or Yukon Gold potatoes cut into small chunks

2 tablespoons chopped parsley

salt/pepper to taste

 

Bring garlic to a slow rolling boil in broth and cook for about 4 minutes.

 

Reduce heat to simmer and add potatoes and caraway seeds.

 

Cook about 15-20 min until potatoes are tender.

 

Add parsley as garnish before serving.

 

Sea Salt and Black Pepper to taste.
