No Oil Tabbouleh Recipe for Spring



1 cup boiling water

1/2 cup bulgur

1/4 cup lemon juice

1/4 teaspoon cumin

Pinch of allspice

1/4 cup fresh cucumber juice

1/2 teaspoon minced garlic

1/4 teaspoon salt

1 tablespoon white wine vinegar

Freshly ground pepper, to taste

2 cups finely chopped flat-leaf parsley

2 Roma tomatoes or handful of cherry or grape tomatoes, diced

1 small cucumber, peeled, seeded and diced

3 Mejdool Dates chopped



In a mixing bowl, pour water over bulgur and let stand ½ hour.  Drain off any excess water.

Mix all ingredients together with a flat spoon or spatula to combine well.

Salt and pepper to taste.

Optional:  Substitute mint for ¼ of the parsley for added flavor.  Scallions or chives also add extra flavor.  Toasted Walnuts or almonds add extra crunch.

Substitutions:  Millet or quinoa make great substitutes for the bulgur if you are looking for variety or gluten-free options.
